Window Box Lettuce

For about $20 and 15 minutes of your time, you can have homegrown-warm-from-sun-organic lettuce for an easy 5 months. Now that’s cost effective and eco-friendly

Here is what you need

· A sunny spot by or just outside your window

· A 6in deep, however long you want, plastic window box (at Home-Depot for $7)

· A variety of already sprouted, organic lettuces (at Home-Depot, for $1.98 for 4)

· Organic Choice potting soil (you can buy in multiple sizes, but the smallest one is perfectly fine for this one project, and will cost around $7)

Here is what you do.

· Fill your window box ¾ full with your soil

· Place your little lettuces very gently in the window box, about 3 in apart, or honestly less*

· Fill in around your little babies with some soil, and press ever so slightly down around the base of the plant to secure it

· Water; but try not to get the leaves wet… go around the plants. Keep the soil moist, depending on temperatures this will vary.

How to Harvest

· As your lettuce babies root into their happy nursery, you will notice the outermost leaves growing bigger, taller and greener. These are the ones you want to eat.

· Trim these leaves with tiny scissors or with a pinch between fingernails. Never take all the leaves off the plant, just the biggest ones. This way, the smaller ones will grow in order to take the places of the ones we just picked.

· Give them a little rinse, or don’t if you don’t want to

· Enjoy them as you would with any lettuce. Arugula is great on pizza with prosciutto and mozzarella!
